American pancakes with syrup

American-style stack — a frying-pan treat for a calm anchorage morning.

Ingredients for 4 crew

  • Plain flour320 g
  • Egg4 unit
  • UHT milk480 ml
  • Baking powder4 tsp
  • Sugar4 tbsp
  • Maple syrup or honey80 ml
  • Butter or oil for the pan40 g

Method

  1. 1Mix flour, baking powder and sugar in a bowl; whisk in egg and milk to a thick batter.
  2. 2Fry ladles of batter in a buttered pan, 2 minutes a side, until golden.
  3. 3Stack on warm plates and pour syrup over the top.

Chef's notes

  • Only attempt a full stack in calm water — flipping pancakes in a seaway ends on the floorboards.

Plating & decoration

  • Stack 2–3 pancakes per person, syrup running down the sides.

Decoration should always be something you can eat — thyme, mint, basil, red pepper.
