American pancakes with syrup
American-style stack — a frying-pan treat for a calm anchorage morning.

Ingredients for 4 crew
- Plain flour320 g
- Egg4 unit
- UHT milk480 ml
- Baking powder4 tsp
- Sugar4 tbsp
- Maple syrup or honey80 ml
- Butter or oil for the pan40 g
Method
- 1Mix flour, baking powder and sugar in a bowl; whisk in egg and milk to a thick batter.
- 2Fry ladles of batter in a buttered pan, 2 minutes a side, until golden.
- 3Stack on warm plates and pour syrup over the top.
Chef's notes
- Only attempt a full stack in calm water — flipping pancakes in a seaway ends on the floorboards.
