Butter fried bananas with yellow curry and vanilla

Ingredients for 4 crew
- Bananas, ripe2.8 unit
- Butter60 g
- Yellow (sweet) curry powder20 g
- Vanilla sauce260 ml
- Honey40 ml
- Mint, fresh8 leaf
Method
- 1Melt butter in the frying pan on medium heat and slice the bananas straight in.
- 2Once frying steadily, turn them and dust generously with yellow curry powder. A few minutes is enough — add honey if the curry is not sweet enough.
- 3Serve on individual plates with mint leaves and the cold vanilla sauce on the side.
Chef's notes
- Do not peel the bananas until just before frying — it keeps the colour bright.

Plating & decoration
- ◆Plate the bananas individually, never in one heap.
- ◆Mint leaves on top, vanilla sauce served cold on the side.
- ◆Ice cream or sorbet works just as well as the sauce.
Decoration should always be something you can eat — thyme, mint, basil, red pepper.
