Butter fried bananas with yellow curry and vanilla

Ingredients for 4 crew

  • Bananas, ripe2.8 unit
  • Butter60 g
  • Yellow (sweet) curry powder20 g
  • Vanilla sauce260 ml
  • Honey40 ml
  • Mint, fresh8 leaf

Method

  1. 1Melt butter in the frying pan on medium heat and slice the bananas straight in.
  2. 2Once frying steadily, turn them and dust generously with yellow curry powder. A few minutes is enough — add honey if the curry is not sweet enough.
  3. 3Serve on individual plates with mint leaves and the cold vanilla sauce on the side.

Chef's notes

  • Do not peel the bananas until just before frying — it keeps the colour bright.

  • Sharp knife
  • Turner or big spoon

Serve it in

  • Small dessert plates
  • Small jug or bowl for the cold vanilla sauce
  • Dessert spoons

Plating & decoration

  • Plate the bananas individually, never in one heap.
  • Mint leaves on top, vanilla sauce served cold on the side.
  • Ice cream or sorbet works just as well as the sauce.

Decoration should always be something you can eat — thyme, mint, basil, red pepper.
