Nordic open sandwiches

Ingredients for 4 crew
- Rye or dark bread8 slice
- Smoked fish, herring or tinned fish160 g
- Boiled egg (boil a batch the night before)4 unit
- Butter or cream cheese120 g
- Cucumber or pickled gherkin1 unit
- Dill or chives4 sprig
Method
- 1Butter the rye bread right to the edges — that is the Nordic way.
- 2Layer fish or sliced egg on top, then cucumber.
- 3Finish with dill, black pepper and a squeeze of lemon if you have one.

- Boil eggs the evening before while dinner is on — zero gas, zero morning fuss.
