Nordic open sandwiches

Ingredients for 4 crew

  • Rye or dark bread8 slice
  • Smoked fish, herring or tinned fish160 g
  • Boiled egg (boil a batch the night before)4 unit
  • Butter or cream cheese120 g
  • Cucumber or pickled gherkin1 unit
  • Dill or chives4 sprig

Method

  1. 1Butter the rye bread right to the edges — that is the Nordic way.
  2. 2Layer fish or sliced egg on top, then cucumber.
  3. 3Finish with dill, black pepper and a squeeze of lemon if you have one.

Chef's notes

  • Boil eggs the evening before while dinner is on — zero gas, zero morning fuss.

Plating & decoration

  • One topping per slice, neatly overlapped — never pile them up.
